I lose interest with recipes that take a long time to prepare & cook. I try new recipes or new versions of old favourites. All of my 'Just' series of blogs have recipes which I have tried and tested. I like quick, easy to cook tasty recipes. ENJOY!

Berry / Maple Syrup Dessert
This easy dessert is light and refreshing when fresh berries are at their best. You can use frozen but I still think fresh are best.
Rinse and rough slice 6 large juicy strawberries. Place in a boat serving dish and drizzle over a tsp good quality balasmic vinegar.
Add tbspfuls of berries mixture (blueberries, raspberries, cranberries, blackberries whatever is available).
Arrange 8 peeled peach slices around the edges.
Top berries with 1 tbsp maple syrup and 3 tbsp greek full fat yoghurt and drizzle over Lyles golden syrup squeezed from a plastic bottle type.
Sprinkle all over with a generous portion of sesame seeds.

Berry Greek Yoghurt Parfait
Line a 2lb loaf tin with clingfilm.
Mash 2 peeled bananas until smooth and fold into 1kg greek yoghurt.
Add 125g fresh or partly defrosted frozen raspberries, add 70g fresh or partly defrosted frozen blueberries and 100g chopped strawberries mixing well. Pour into the loaf tin and sprinkle with milled linseed with goji berries / pumpkin and sunflower seeds mix.
Cover with clingfilm and freeze or for around 6 hours.
When serving remove from freezer leaving to stand for 20 minutes, then remove from the tin and peel off clingfilm to serve in slices for 14.
For individual servings:
After around 4 hours freezing remove from freezer when you will be able to judge by the consistency to be able to cut into portion slices and remove individual slices for immediate serving or separate for frozen portions.
