I lose interest with recipes that take a long time to prepare & cook. I try new recipes or new versions of old favourites. All of my 'Just' series of blogs have recipes which I have tried and tested. I like quick, easy to cook tasty recipes. ENJOY!

Easy Sticky Toffee Pudding
Heat Oven: 190C / 170fan. Mix 100g dark muscavado sugar and 175g SR flour. Put 125ml milk in a jug & beat in 1 egg, 50g melted butter & 1tsp vanilla essence then pour into sugar mixture, stir well. Fold in 200g chopped dates and place in a 6 serving capacity pudding dish. For the sauce: Over the date mix sprinkle 200g dark muscavado sugar, dot with 25g butter then pour over into the dish 500ml boiling water. Put dish on flat baking tray just in case sauce overflows. Bake 45 mins until springy. When cooked underneath the sauce butter mix will have turned into a rich sticky sauce.
